Chef Vicky Ratnani brings his signature modern Indian cuisine with Thai ingredients and creative twists in Sindh to Siam, celebrating the journey from Sindhi heritage flavours to the vibrant markets of Siam.
On 13–14 August 2026, guests can enjoy Chef Vicky’s a la carte menu at JHOL Bangkok, featuring reimagined Indian classics fused with local Thai produce and techniques. The takeover highlights bold, playful dishes that blend street-food energy with refined execution.
Chef Vicky Ratnani
Chef Vicky Ratnani is one of India’s most celebrated culinary storytellers, with over three decades of global experience redefining modern Indian cuisine. His journey began aboard the Cunard Line, followed by serving as personal chef to Nelson Mandela. Known for immersive, ingredient-driven experiences, Vicky has hosted over 500 television episodes, authored the cookbooks Vicky Goes Veg and Urban Desi, and collaborated with leading brands worldwide. His philosophy: celebrate culture, honour ingredients, and connect people through unforgettable food.
