Bubble up the joy of festivity with French Champagne

French GourMay Food & Wine Festival is the one and only major festival in Hong Kong and Macao dedicated to gastronomy à la française. Celebrating the theme of ‘Bubble Up’ this year, the festival spotlights France’s famed sparkling wines, unboxes the art on the plate and makes gastronomic philosophies accessible to everyone. French sparkling wines, a symbol of joy and festivity, have been served to mark memorable events or to simply enjoy ‘les petits plaisirs de la vie’ (little pleasures in life).

Located at The Parisian Macao, Brasserie is the place for an authentic French experience, from food to ambience. A special four-course French GourMay menu is created by French Executive Chef Daniel Brolese, highlighting the country’s unique culinary treasures. The meal starts with an amuse-bouche of pâté en croûte with duck foie gras and prune confit in Armagnac, a wonderful symphony of flavours and textures composed by the buttery and rich foie gras and the refreshing prunes. For appetisers, guests can choose marbled octopus carpaccio with citrus and oyster in Crémant d’Alsace jelly and caviar, or braised veal sweetbread feuilleté in morel sauce. Guests can then enjoy the Bouillabaisse-style fish soup with seafood crouton and aioli sauce.

Main course options include rainbow trout fillet in almond crust, endive meuniere and lemon butter sauce; and braised white bean stew with Toulouse sausage, duck confit and lamb shank, highlighting the unique flavours of south-western France. Finally, vanilla and Rum baba with vanilla ice cream and Rum jelly or selected cheeses from our Parisian affineur finishes the meal off sweetly.

A true French gastronomic extravaganza, the four-course menu is only available for dinner from April 28 to May 31, 2023 (except May 13 and 14), priced at MOP 648* per person. With an additional MOP 238*, guests can pair dishes with two selected French wines, including the acclaimed Pol Roger Brut Réserve Champagne, which is ripe and thirst-quenching on the palate with a bouquet of floral and fruity aromas and a superb taste of brioche.

Guests can also opt for the Spring Weekend Afternoon Tea on Saturdays and Sundays from now until May 28, 2023. The afternoon tea is available from 3 p.m. to 6 p.m. and priced at MOP 368* for two persons. The tea set includes a selection of sweet and savoury floral-inspired treats, bringing the tenderness of spring to your dining table.
