Held at the iconic Akoya | Star Lounge overlooking Ao Yon Bay, the Andaman Sea, the experience is led by Executive Chef Pisut (Chef Nong) and Head Mixologist Mongkol Saengchud (Lek), bringing together local ingredients, modern techniques, and creative storytelling through food and beverage. Inspired by the richness of Phuket Andaman produce, the menu reflects a modern Thai fusion philosophy, blending authentic regional flavours with elevated presentation and innovative pairings.
Guests can discover a curated collection of new creation bites including Tupat Sutong Fine Bite, Southern Chicken Golek (Yakitori Style), Crispy Phuket Blue Swimmer Crab Ravioli, Phuket Tiger Sweet Snail À La Bourguignonne, Southern Bonito Escabeche, and Phuket Coconut & Pineapple Velouté. Each creation is thoughtfully paired with bespoke cocktails crafted to complement and enhance every flavour profile.
Signature cocktails include:
- Yamu Negroni – tequila, vermouth rosso, Campari, guava and plum notes
- The Joom-Po – gin with Phuket santol pickle and IPA hops reduction
